Savory Breakfast Bowl

What’s better than a hearty breakfast bowl to start your day on the right foot? This savory breakfast bowl is paleo, Whole30-friendly, and not to mention tasty! Fuel your body with this filling single-serving recipe and feel the difference a healthy breakfast can make. Made with breakfast favorites, an egg, baby potatoes, avocado,turkey sausage, and other nutritious ingredients, you are sure to love this healthy breakfast idea.

 

Ingredients:

  • 2 tablespoons ghee or oil, divided (plus more as needed)
  • 4 oz baby red potatoes
  • Potato seasonings – sea salt black pepper, smoked paprika, garlic powder, chili powder
  • 1 handful chopped kale + 1 tablespoon water
  • 3-4 oz grass fed ground turkey sausage or any grass fed ground meat*
  • 1 large egg
  • 1/4-1/2 avocado sliced, plus lime juice and sea salt
  • Scallions thinly sliced
  • Fresh salsa

Directions:

  1. Place the potatoes in a microwave safe bowl and heat on high for 3 minutes to soften.
  2. Heat a medium skillet over medium high heat and add the oil. Add the potatoes and sprinkle lightly with all the seasonings.
  3. Fry the potatoes until browned and crisp, about 3 minutes, then use a slotted spoon to remove to a bowl and keep warm with aluminum foil.
  4. Add a bit more ghee to the skillet, then add the chopped kale and water and cover to wilt. Uncover and stir, cooking until it reaches your preferred consistency. Sprinkle it with sea salt and pepper, then add to the same bowl as the potatoes.
  5. To the same skillet, add the grass fed sausage or ground meat and cook until browned, about 2 minutes. Add this to the bowl as well and cover to keep warm.
  6. Adjust the heat to medium and add the remaining tablespoon of ghee to the skillet to fry the egg. Cook the egg to preference, spooning some of the ghee in the pan over the top of the egg, or flip if preferred.
  7. Add the fried egg to the bowl and top with sliced avocado drizzled with lime juice and sea salt, scallions, and fresh salsa, if desired. Serve right away and enjoy!
